    Staying healthy over the summer days!

    Probably you have been sick at least once over the summer? I dare to say that most people have been this through ;) It is not very cool when you are having fever and out there is 40 degrees. It happened so many times that you have planned a trip and you got sick just before. That’s why you have to be extra carefull if you want to plan your vacation!

    Don’t be stressed, thats the first rule. Drink enough fluids, any natural juces will do, but dont drink too mutch though. Fresh vegetables and fruits are imprtant to your well being, as they contain lots of vitamins and antioxidants!

    Be active, sport is healty when you do it right and without risk of a injury. Daily activity like half an hour or more is perfect! Go for walks in the park for starters!

    Vegetable Potato Salad with Italian Dressing

    Description

    This is a great and refreshing salad with potatoes, various vegetables and rich nutritional value.

    Ingredients (for 8 persons)

    - 1 pound red or white potatoes, peeled
    - 1/4 cup diced celery
    - 1/4 cup diced green peppers
    - 1/4 cup diced red peppers
    - 1 1/2 teaspoons basil
    - 3 tablespoons non-fat sour cream
    - 1/3 cup low-fat Italian dressing
    - 2 teaspoons mustard
    - 1/2 teaspoon seasoned salt
    - 2 teaspoons sugar substitute (Splenda) brown sugar blend
    - 1/4 teaspoon freshly ground pepper
    - paprika and fresh herbs, optional

    Instructions

    Peel potatoes and cut into 1 1/2 - 2 inch cubes. Cook potatoes in a large pot until tender, about 10 minutes. Do not overcook.

    Drain the potatoes and let them cool.

    In a large bowl, combine the potatoes, celery, green and red peppers, and basil.

    In a small bowl, stir together sour cream, Italian dressing, mustard, seasoned salt, sugar substitute (Splenda), and pepper. Pour the dressing over the potatoes and toss gently until thoroughly coated. Refrigerate at least 4 hours to blend flavors and chill. Sprinkle with paprika and garnish with fresh herbs.
